I cannot believe it’s already the end of March! Time is just flying by! I’ll admit the last couple of weeks have not been easy and I seemed to have lost focus on the more important things in life. Being healthy is so much more than simply eating well and being physically active; wellness includes a balance between these two along with social, spiritual, environmental, and mental health. For some reason I let the stress of school consume every minute I was awake and it was all I talked about. I didn’t make the time to do the things I love, like blog, read, cook and spend quality stress-free time with my loved ones and now I realize how stupid that was of me. My work load isn’t going anywhere, but why should I be so focused on only one aspect of life? When it’s all said and done i’ll simply just have lost precious time that I could have spent doing something that makes me happy.
I made an effort this week to change my way of thinking and it has helped tremendously! I had a wonderful day today and I was able to eliminate so much unnecessary stress. I spent lunch time with my boyfriend, came home to finish up some homework, baked up a loaf of gluten-free banana bread, made it outside for an 8 mile run, and had dinner with my parents. Currently I am bundled up in a big blanket, with a cup of tea, giving my brain a break because I deserve it.
After my run I couldn’t wait to have a slice of banana bread and it did not disappoint! So I have a recipe to share!
Banana Bread
Ingredients: 3 large ripe bananas (mashed), 2 eggs, 2 tbsp butter, 3 tbsp honey, 1 tsp vanilla, 1 cup gf oat flour, 1/2 cup plain gluten free flour, 1 1/2 tsp baking powder, 1/4 tsp baking soda, pinch of salt, 1 tsp cinnamon, 1/4 tsp ground cloves, 1/2 tsp nutmeg
