As promised, I have some yummy recipes to share! My mom recently bought some awesome Tupperware products and I am in cooking heaven! First I will start by saying that I love sweet potatoes and anything that has to do with them. They are absolutely delicious and you can prepare them so many different ways! Today I made baked sweet potato chips because I have a lovely mandolin that makes the job so much easier!
Baked Sweet Potato Chips
-1 Large Sweet Potato -About 2 tbsp. Coconut Oil -Rosemary and Salt for seasoning Pre-heat oven to 375. Slice sweet potato into really thin slices (the thicker the slices, the longer they need to crisp up). Melt coconut oil and in a large bowl mix the sweet potato slices to make sure they are thoroughly coated. Line a baking sheet with parchment paper. Lay out sweet potato slices on to baking sheet. Sprinkle rosemary and salt lightly over the slices. Depending on the thickness of the slices, bake anywhere from 10-12 minutes then remove from the oven and flip. Place back into oven for another 10-12 minutes. When the sweet potato slices look crisp and the edges are brown remove from oven and let cool. Make sure you keep an eye on your chips while they are baking so they don’t burn! The next recipe is absolutely delicious and a sweeter take on traditional salsa. If you love fruit like I do, this recipe is a must! My mom bought this cool chopper from Tupperware that chops things super fine and it is what I used to make this, but you could also use a food processor.
This recipe is great because you can play around with it and make it whatever consistency you would like. – 2 Granny smith Apples – 1 Quart of Strawberries – 3 Kiwi – 2 Tbsp of Apple Butter By combining all of these ingredients in your chopper or food processor you get such a fresh and sweet salsa which is great for summer time! Try pairing it with vanilla wafers, graham crackers, pretzels, or whatever you like!
